Let's start by defining in general terms what is an ecological wine: it must comply with a special regulation, it must have a label that certifies it, and both the grapes and the preparation must meet the parameters of care and quality,RESPECTING THE WORLD AROUND US.
Visual: A clean wine, with a medium-dark rim and intense dark ruby color.
Olfactory: It is a display of aromas of ripe black and red fruits, jams, with a point of sweetness that even reminds of gummies.
Tasting: It has a soft entry highlighting the sweet part, a balanced mouthfeel and a not too long aftertaste.
Pairing: Charcoal grilled meats, sautéed vegetables, pasta with sauces, semi-cured cheese, cold meats and appetizers of salted almonds and nuts in general.

Origin of the grape. Ecological vineyards of Tinta de Toro with poor sandy soils located in the towns of Venialbo and El Pego (DO TORO). The production per hectare is between 2000 and 3000 kg per hectare. The harvest is done manually.
Fermentation. Alcoholic fermentation takes place in tanks and malolactic fermentation in barrels where it will remain for 6 more months. before bottling. Light toasted Missouri American oak barrels.
Maturation in bottle. 12 months.
Naturalness of the wine. In addition to being an ecological wine, we want to respect the integrity of the wine as much as possible, so that after the period of maturation in the barrel, the wine is subjected to only a weak filtration.
